Portuguese Style Bean Soup

  

I wanted to make portuguese bean soup and found some recipes online.  I didn't want to add mac noodles so omitted that and wanted it to be meatier so used pork shoulder and liquid smoke instead of smoked ham hock.

Fire Roasted Bell Pepper Toast

 

 
 
I went to Trader Joes and got a bunch of stuff. I wish we had that store here in Hawaii.  So anyway, a couple things I got were the fire roasted bell peppers and balsamic glaze.

The airfryer bread is a recipe I found on YouTube by Simple Recipes Kitchen.  I've tried a few different bread recipes, but this one is by far the easiest of all.  I make this one two to three times a week.  Here's the link to her recipe https://www.youtube.com/watch?v=_nlopgwNCkw
 
Here's how to make the toast.
 
Ingredients:
  • Bread (buy or make your own bread)
  • Clove of garlic
  • Cream cheese
  • Fire roasted bell peppers
  • Balsamic glaze
  • Dried basil
Instructions:
  1. Toast your bread
  2. Rub with a clove of garlic
  3. Spread desired amount of cream cheese
  4. Add fire roasted bell peppers
  5. Drizzle balsamic glaze
  6. Sprinkle dried basil

Unstuffed Cabbage

 

I wanted to eat stuffed cabbage rolls, but didn't want to actually stuff any cabbage. Lol.  So i just chopped it up and made the meat part into meatballs instead.  

Here is a link to the original recipe I found https://www.smalltownwoman.com/cabbage-rolls/.  My version had some changes like omitted the rice, substituted white sugar for brown (because that's what I had on hand), used all ground beef (no pork sausage), and did not stuff or bake anything.  It still turned out really delicious.

Here's my version.

Ingredients:

  • 1 Tablespoon olive oil
  • 1 medium onion, chopped
  • 5 cloves garlic,minced
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 Tablespoon apple cider vinegar
  • 1-1/2 Tablespoon white sugar
  • 1 large cabbage
  • 1 pound ground beef
  • 1 egg
  • 1 Tablespoon dried parsley
  • 1/2 teaspoon paprika

Instructions:

  1. Prepare ingredients as described above (chop, mince)
  2. Heat pot and add oil, half the onions and half the garlic. Saute until softened.
  3. Add tomato sauce, diced tomatoes, apple cider vinegar, and sugar. Stir.
  4. Add cabbage and cover.  Stir occasionally.
  5. In a separate bowl, combine ground beef, remaining onion and garlic, egg, parsley, and paprika. 
  6. Form small meatballs and airfry at 350 for 15 minutes.
  7. Add meatballs to pot of cabbage and let simmer together for a few minutes.
  8. Enjoy!
