Low Carb Pork Burrito Bowl

The burrito bowl is low carb but I had it with a side of tortilla chips. You eat it how you like it. I would've loved some cilantro in there, but I forgot to buy some. Basically, you gather up all your ingredients and put the desired amounts of everything in the bowl.

Ingredients I used:

  • pulled pork
  • riced Cauliflower
  • chopped tomatoes
  • chopped onions
  • lime juice
  • limes
  • corn
  • black beans
  • guacamole
  • sour cream

Other suggestions:

  • jalapenos
  • cheese
  • side of tortillas
  • side of tortilla chips
  • Hot sauce
  • cilantro

Cauliflower Buffalo Bites

These are baked. I needed a lot of space to spread all the cauliflower out so this was easier to do it all at once. If I have more time one day, I'll try this in an air fryer to make it crispier. This is yummy and I’ve made it a few times already.

Here’s how I made it.

Ingredients:

  • 1 cauliflower, cut into bite size pieces
  • Extra oil for spraying
 Batter Ingredients:
  • 1/2 c flour of choice (I used tapioca)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/2 cup water
Buffalo sauce ingredients:
  • 1/2 cup hot sauce (I used Frank’s)
  • Dash of Worcestershire sauce
  • 1 Tablespoon honey
  • 5 cloves garlic, chopped
  • 2 Tablespoons salted butter

Instructions:

  1. Preheat oven to 450 degrees farenheit.
  2. Prepare ingredients as listed above (cut, chop).
  3. Make the batter.  Combine all dry ingredients (flour, chili powder, garlic powder, onion powder, and salt) and whisk.  Add water and whisk in well.
  4. Toss cauliflower in the batter, drain excess batter, and spread evenly on baking pan lined with parchment paper.
  5. Spray with oil and bake for 20-25 minutes.
  6. Make buffalo sauce. Combine buffalo sauce ingredients in small saucepan.  Heat through and mix.
  7. Toss cauliflower in buffalo sauce and return to oven for another 20-35 minutes.
  8. Serve with sides of your choice such as carrots, celery, and ranch dressing.
  9. Enjoy!

Garlic Fried Cauliflower Rice with Bangus

I got a craving for bangus. This was one of my favorite childhood dishes that my grandmother would cook. The bangus I purchased came pre-marinated with a vinegar flavor.

Filipinos also love their garlic fried rice. So to veggie it up, I used cauliflower rice. It’s not the same, I know. But sometimes you gotta try to be healthy and accept that this is the “rice” you’re going to eat.

Here’s how I made the Cauliflower Garlic Fried Rice.

Ingredients:

  • 1 bag frozen riced cauliflower (12 ounces)
  • 2 Tablespoons olive oil
  • 10-12 cloves garlic, chopped
  • Dash of salt
  • Scrunch of pepper (yes, I’m a fan of the pasta queen)
Instructions:
  1. Empty contents of bag of cauliflower into large pan.
  2. Stir for 5-7 minutes until defrosted and most moisture came out.
  3. Add oil, garlic, salt, and pepper.
  4. Stir until incorporated.
  5. Serve and enjoy!
As for the bangus, it came boneless and pre-marinated and is commonly sold in this fashion. Fry in oil to your desired brownness and crispiness. Drain excess oil, serve, and enjoy!

Spam & Veggie Stir Fry

I gathered an assortment of ingredients in my kitchen and made this dish happen.  I had a bit of baby bell peppers left over from another recipe, cauliflower in the freezer, spam and rice from the cabinet as well as seasonings, and I always have onions and garlic on hand. This would work with any combination of veggies you have.

Ingredients:

  • 3 cloves garlic, chopped
  • 1 medium onion, sliced
  • 2 cups baby bell peppers, chopped into bite-size pieces
  • 3 ounces spam, cut into cubes
  • 1 bag frozen cauliflower
  • 2 Tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • Scrunch of pepper
  • 2 Tablespoons chopped green onion
  • Sesame seeds (for garnish)

Instructions:

  1. Prepare ingredients as indicated above (chop, slice, etc.)
  2. Add spam to heated skillet. Stir fry.
  3. Add remaining ingredients (except sesame seeds) and stir fry until cauliflower defrosted and warmed through and onions and bell peppers slightly softened.
  4. Garnish with sesame seeds and serve with rice.
  5. Enjoy

Carnitas with Cauliflower Rice and Santa Fe Veggies

My local grocer had pork shoulder on sale.   I found a recipe for slow cooker carnitas that asked for some orange juice.  I already had some orange juice from a haul that I harvested from my parents garden and that was an ingredient so this was perfect.  I paired it with some cauliflower rice, mixed veggies, a sprinkle of cheese, and a spritz of lime.

Here is the link to to the original recipe I used for carnitas: https://www.recipetineats.com/pork-carnitas-mexican-slow-cooker-pulled-pork/

Cauliflower Rice

Stir fried cauliflower rice - dry, until slightly browned

I got a bunch of different vegetables and chopped them so up so they were ready to be cooked when I was ready to cook them.  A whole head of cauliflower was one of them.   While I was busy eating all of the other vegetables, the cauliflower started getting old.  I didn't want it to get wasted, so I chopped it up and froze it. In addition to that, I couldn't find any pre-made frozen cauliflower in the store at the time.  So this worked out great.

Chopped cauliflower is also known as cauliflower rice or riced cauliflower and is often used in place of rice when practicing a low carb diet or lifestyle.  It does not taste like rice or have the texture of rice.  It's still a vegetable.  It is a mind game you have to play with yourself.

The picture above is cauliflower rice, stir fried until slightly browned.  Nothing was added to it - no oils or seasoning.

Watch me make it.

Air Fried Garlic Parmesan Cauliflower

Okay, I was going to call this a fail.  But it really wasn't.  It depends on how you look at it.  It was an experiment and the flavors and textures did go well together.  I made it work.  That's what you do in life.  If something doesn't work, you pivot and change your plan.  After all, experimental is the theme of my cooking.

I had seen pictures of whole cooked cauliflower on Instagram and it looked kinda cool.  A quick internet search returned a recommendation for a cooking temperature of 350 degrees and cooking time of 15 minutes in the air fryer.  I don't have a regular oven, so I'm always looking for air fryer recipes.  I just needed to have an idea of how to cook it.

I made my own flavor combination and cooked it accordingly.  It looked appetizing, but was still hard when I tried to poke it with a fork.  So I cooked it for 10 more minutes, but when I cut it in half, the middle wasn't cooked through.  So I cut it up into florets to have it cook evenly.  My instructions below are for the way I made it.

Ingredients:
  • 1 head cauliflower
  • 8 cloves garlic
  • olive oil for lightly cooking garlic
  • 1/2 cup mayonnaise
  • 1/2 cup Parmesan cheese
  • 2-3 Tablespoons garlic powder
  • 1 Tablespoon ground black pepper
  • 2-3 Tablespoons dried parsley
Instructions:
  1. Lightly fry garlic cloves in olive oil.  Remove garlic and let cool.
  2. Cut off excess leaves and as much of the stem as you can from the bottom of the cauliflower.
  3. Spread mayonnaise evenly over cauliflower.
  4. Chop garlic and pat onto cauliflower.
  5. Sprinkle Parmesan cheese, garlic powder, and ground pepper, and dried parsley onto cauliflower.
  6. Air fry for 25 minutes at 350 degrees.
  7. Cut into florets and air fry for 10 more minutes at 400 degrees.
  8. Serve.
