Carnitas with Cauliflower Rice and Santa Fe Veggies

My local grocer had pork shoulder on sale.   I found a recipe for slow cooker carnitas that asked for some orange juice.  I already had some orange juice from a haul that I harvested from my parents garden and that was an ingredient so this was perfect.  I paired it with some cauliflower rice, mixed veggies, a sprinkle of cheese, and a spritz of lime.

Here is the link to to the original recipe I used for carnitas: https://www.recipetineats.com/pork-carnitas-mexican-slow-cooker-pulled-pork/
