French Onion Pork Chops with Steamed Broccoli


The pork chops were on sale at the market so I bought a pack.  I'm trying to eat low carb right now so I found a recipe online for a French Onion Pork Chop.  I had it with a side of steamed broccoli, which was also on sale. The flavor was good, but I overcooked it a bit.  So it was a little too dry.

Roasted Bell Pepper Hummus


My dad harvested some red bell peppers from his home garden for me.  I got a lot of goodies from his garden so couldn't eat them all in time.  I cleaned, prepped and freezed them for later use. I cut them in two different styles with the intention of adding them to chili and a stir fry.  However, I ended up using them to make roasted red bell pepper hummus.

I used lime instead of lemon because that's what I had on hand and added a bit more olive oil because I wanted the texture smoother. I also air fried my bell pepper and didn't peel off the skin.

Apple Cider Vinegar Paleo Coleslaw

I made a cabbage soup and had some extra cabbage and carrots.  I would've used them all up if they fit in my slow cooker, but they didn't.  So I decided to make something else with it and I found this apple cider vinegar paleo coleslaw recipe.  Someone once told me that cabbage has more nutrients than lettuce.  I didn't believe it, but I googled it and it's true!

Kabocha Pumpkin Fest


My grandma harvested a pumpkin from her garden for us.  I made some air fried pumpkin, then also some spicy pumpkin salad with it. Yum!
