Roasted Bell Pepper Hummus

My dad harvested some red bell peppers from his home garden for me.  I got a lot of goodies from his garden so couldn't eat them all in time.  I cleaned, prepped and freezed them for later use. I cut them in two different styles with the intention of adding them to chili and a stir fry.  However, I ended up using them to make roasted red bell pepper hummus.

Here's the link to the original recipe I followed: https://www.inspiredtaste.net/22016/roasted-red-pepper-hummus-recipe/

I used lime instead of lemon because that's what I had on hand and added a bit more olive oil because I wanted the texture smoother. I also air fried my bell pepper and didn't peel off the skin.

Scallion harvest and prep

My father harvested a bunch of scallions for me from his home garden. We cleaned them all up and prepped them for cooking.

Homegrown, organic, sustainable, abundant gardening.

Lima Bean side

I harvested some lima bean pods from my grandparents' garden.  So they're homegrown, organic, sustainable, and after I cooked them, it's garden to table. Ha!  I enjoyed it as a side dish with some ribs, white rice, and a little tomato salad.

Ingredients:

  • Lima beans
  • garlic, chopped
  • butter
  • olive oil
  • salt and pepper
  • water for boiling

 Instructions:

  1. Pick lima bean pods.
  2. Bring pot of water to boil.
  3. Rinse lima bean pods and remove beans from pods.
  4. Boil lima beans for 3 minutes, until fork tender and drain.
  5. Melt butter in pan.
  6. Add garlic and olive oil to butter and stir until fragrant.
  7. Add beans, salt, and pepper and stir.
  8. Enjoy!

First 2022 Bean Harvest

Look at this colorful array of beans!  This is my first harvest of 2022 from my container garden.  I've got yellow, purple, and green beans.  These were planted a few months ago.  The seeds were ordered from a vendor on Etsy called TomorrowSeeds.  Here's the link to the bean seeds, if you'd like to grow this variety.  https://etsy.me/3um8kwg

I made a simple side dish with this small harvest and served with with some cold tofu.  It was basically stir fried beans, a clove of garlic, olive oil, salt, pepper, and onion powder.

Stir Fried Purple Pole Beans

Stir fried purple pole beans with arabiki sausage and brown rice

Well, damn.  What happened to the purple color in these purple pole beans?  It's almost as if the processing (cutting and cooking) pulled out majority of the pigment from them.  If I showed you this picture without saying anything, you'd probably say those were regular green beans, right?

These beans came from my container garden.  I moved recently, to a location that doesn't have space for a garden.  I was bummed, but oh well. That's life, you move on and pivot.  During this move, I gave my garden to one of my really good friends.  She has a big yard and has a lot of space for them.  The pole beans had just started flowering when they moved.  When I payed her a visit, beans had grown!  She let me take the first harvest and these are it.

Purple pole bean harvest
It's a super simple side dish that almost doesn't even need a recipe.  But anywho, here it is.

Ingredients:
  • 6 purple pole beans, ends trimmed and sliced diagonally
  • 1 clove garlic, chopped
  • 1 tablespoon olive oil
  • dash of salt
  • dash of ground black pepper
Instructions:
  1. Prepare ingredients as indicated above (trim, slice, chop).
  2. Heat frying pan.
  3. Add oil.
  4. Add garlic and stir quickly.
  5. Add sliced beans quickly after beans so that the garlic doesn't burn.  (If it burns, it will be bitter.) Stir fry.
  6. Add salt and pepper.
  7. Stir fry.
  8. Enjoy!

Easy Garden Guacamole

I absolutely love the idea of gathering plants from the yard and turning it into a delicious dish.  I made this simple guacamole with an avocado from my parents' yard and tomatoes from my grandmother's yard.  The avocado and tomatoes were grown organically on the island of Kauai.

I know a lot of people don't have easy access to fresh, organic produce.  I don't regularly have that luxury where I live either.   But I love to take advantage of it when I visit home.

Ingredients:
  • 1 avocado
  • 4 small tomatoes, chopped
  • 1 Tablespoon lemon juice
  • Sprinkle of salt
Instructions:
  1. Slice avocado open, remove pit, scoop out, and mash.
  2. Chop tomatoes and add to mashed avocado.
  3. Add lemon juice.
  4. Sprinkle salt and mix.
  5. Serve.
