Chicken Stir Fry with Mixed Vegetables

 

I used frozen prepared vegetables for this.  Very convenient.  I don't have a long story to scroll past.  That's my story.  I'm done now.  My recipe follows.

Ingredients:

  • 2 lbs chicken tenders, chopped into bite-sized pieces
  • 7 cloves of garlic, chopped
  • 1 yellow onion, chopped
  • 1-1/2 pounds frozen mixed vegetables
  • 1/4 cup oyster sauce
  • 1 Tablespoon sesame oil
  • 1Tablespoon toasted sesame seeds
  • olive oil for cooking

Instructions:

  1. Prepare ingredients as listed above (chop).
  2. Heat pan.  Add olive oil, garlic, onions. Stir fry until fragrant.
  3. Add frozen mixed vegetables. Stir fry until defrosted. Remove from pan and set aside.
  4. Add olive oil to pan.  Add chicken.  Stir fry until no pink is left.
  5. Add vegetables back in pan and stir so chicken is evenly distributed.
  6. Add oyster sauce, sesame oil, and sesame seeds. Stir to combine flavors well.
  7. Enjoy!

Air Fried Okinawan Sweet Potato Fries

Ingredients:

  • Okinawan sweet potato
  • Coconut oil

Instructions:

  1. Rinse sweet potato.
  2. Cut evenly into fries shapes.
  3. Air fry for 20 min at 400 degrees.
  4. Enjoy!

Raw Broccoli Salad (no meat)

 

This recipe doesn't have meat.  I googled around and looked at several broccoli salad recipes.  Some cooked the broccoli, some did not, some added bacon, and I even stumbled across some vegetarian and vegan recipes.  My recipe is not vegan, it just doesn't have meat.  I had a huge serving of it with a tuna sandwich.  All the fiber in the broccoli kept me full for hours! Without further adieu, here's my recipe.

Ingredients:

  • 1 head broccoli (crown cut into bite-sized florets, stem cut into matchsticks)
  • 1/2 red onion (chopped)
  • 2-3 cups red grapes (sliced in half)
  • 1/4 cup pumpkin seeds
  • 1/2 cup almonds (chopped)
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1/2 cup mayonnaise

Instructions:

  1. Prepare ingredients as indicated above (cut, chop, slice).
  2. Add broccoli, red onion, red grapes, pumpkin seeds, and almonds to a large bowl.
  3. In a separate bowl, combine sugar, vinegar and mayonnaise.
  4. Add mayonnaise mixture to broccoli mixture and toss well.
  5. Enjoy!

Air Fried Blue Cheese Pork Panko Chicken Tenders

Happy Anniversary to Abundance of Vegetables! As of right now, as I'm typing this, that video has received 12,876 views.  It also got a few shares.  I don't know how to go back and get the names of the accounts that shared and gave me credit. Lol!

Obviously, I don't only eat and cook plants.  I'm not vegan or vegetarian.  I like the ideas and inspiration from them, but I can't go all out.  I just try to make sure there's some type of vegetable in the meal.  The tossed greens are the vegetable here.  Anywho, enjoy!

Ingredients:

  • Chicken tenders
  • Blue cheese dressing
  • Pork Panko (ground pork rinds)

Instructions:

  1. Defrost the desired amount of chicken tenderloins.
  2. Toss chicken in blue cheese dressing.
  3. Roll blue cheese coated chicken in pork panko.
  4. Arrange chicken into air fryer pan, making sure not to overlap for even cooking.
  5. Cook at 400 degrees for 20 minutes.
  6. Enjoy!

Air Fried Broccoli Romanesco and Pork Panko Turkey Burgers

 

This was my first time trying broccoli romanesco.  I didn't intentionally choose this.  I actually wanted broccolini, which was what I placed in my Amazon Prime Whole Foods order.  That was not available at the time, so it was replaced with the next bet substitute, which is this broccoli romanesco. 

The actual look of it resembles a cross between a head of cauliflower and a lighter color of green.  The texture is a bit harder and it doesn't crumble as easily as cauliflower does.  I cooked it in my air fryer with my go-to spices for vegetables, which consist of olive oil, garlic powder, onion  powder, salt, and black pepper. 

I had it with some pork panko turkey burgers.  Here's the recipe for them.

Ingredients:

  • 1 package ground turkey (about 2 lbs.)
  • 1/4 onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • dash of salt
  • dash of ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 Tablespoon dried parsley
  • pork panko to coat

Instructions:

  1. Mix all ingredients above, except pork panko.
  2. Press balls of turkey mixture onto pork panko.
  3. Air fry for 20 minutes at 380 degrees.

Dijon Mustard and Red Wine Vinaigrette Fish

 

I recently saw a video on Instagram for a simple dressing recipe by chef Alex Guarnaschelli.  Unfortunately, I didn't bookmark it and I can't find it now.  I googled and scrolled all over the Food Network account.

It was just three ingredients: dijon mustard, red wine vinegar, and olive oil with a ratio of 1:1:2. I tried it with some cracked black pepper on tossed greens and really liked it.  So I decided to try this dressing as a marinade for fish.  

The fish I used was called swai.  Although I like the dressing, the fish was awful.  It had a dirt flavor that overpowered the dressing.  I made a post on Facebook Marketplace to give away the remainder for free to someone who would enjoy this, as I clearly did not.  A woman replied quickly replied to my post and drove from Kapolei.  She was thankful and said she'd have her boyfriend prepare it with a batter in the way Zippy's restaurant prepares fish.

Butter Roasted Pumpkin Seeds

Garlic Butter Carving Pumpkin Innards

  

My buddy and I carved a pumpkin for her daughter.  While gutting it, I noticed the innards looked like spaghetti squash.  So I decided to save them and try to cook it as a side dish.  Long story short, it was not delicious.  Butter garlic flavor is not enough.  It needs a stronger flavor combo as it's pretty tasteless and doesn't even take flavor on.  I think this experiment might be good with a thick, heavy sauce if you wanted a gluten-free option.

This recipe is not worth typing out, especially since it didn't turn out that great.  It's just butter, garlic, salt, and pumpkin innards. But you can watch me make it.

Asian Slaw

  

I placed a Whole Foods grocery order online via Amazon Prime for pickup.  The idea of ordering groceries online seems ideal for busy people.  One of the items in my order was two green zucchini. But apparently, that was not available and it was substituted with the next best choice, which was two green cabbages.  Really?! 😂
