Panko Crusted Ranch Chicken

My preferred method of cooking this is in the air fryer.  However, I wanted to cook a bigger batch so tried baking it in the oven at 400 degrees for half an hour.  I was not pleased with the texture so finished them off in the air fryer at 400 degrees for 10 more minutes.

All you need for this is chicken, ranch dressing, panko, and spray oil.

See my previous post on this dish for the recipe. Note: Adjust and increase cooking time as needed. Thighs will need a little longer than tenderloins. https://www.abundanceofvegetables.com/2019/10/air-fried-ranch-panko-chicken-tenders.html

Air Fried Blue Cheese Pork Panko Chicken Tenders

This is a variation of my most popular post, which is the Air Fried Ranch Panko Chicken Tenders that I shared a year ago.  Here is the link if you'd like to see what it was all about.  https://www.abundanceofvegetables.com/2019/10/air-fried-ranch-panko-chicken-tenders.html

Happy Anniversary to Abundance of Vegetables! As of right now, as I'm typing this, that video has received 12,876 views.  It also got a few shares.  I don't know how to go back and get the names of the accounts that shared and gave me credit. Lol!

Obviously, I don't only eat and cook plants.  I'm not vegan or vegetarian.  I like the ideas and inspiration from them, but I can't go all out.  I just try to make sure there's some type of vegetable in the meal.  The tossed greens are the vegetable here.  Anywho, enjoy!

Ingredients:

  • Chicken tenders
  • Blue cheese dressing
  • Pork Panko (ground pork rinds)

Instructions:

  1. Defrost the desired amount of chicken tenderloins.
  2. Toss chicken in blue cheese dressing.
  3. Roll blue cheese coated chicken in pork panko.
  4. Arrange chicken into air fryer pan, making sure not to overlap for even cooking.
  5. Cook at 400 degrees for 20 minutes.
  6. Enjoy!

Air Fried Broccoli Romanesco and Pork Panko Turkey Burgers

This was my first time trying broccoli romanesco.  I didn't intentionally choose this.  I actually wanted broccolini, which was what I placed in my Amazon Prime Whole Foods order.  That was not available at the time, so it was replaced with the next bet substitute, which is this broccoli romanesco.

The actual look of it resembles a cross between a head of cauliflower and a lighter color of green.  The texture is a bit harder and it doesn't crumble as easily as cauliflower does.  I cooked it in my air fryer with my go-to spices for vegetables, which consist of olive oil, garlic powder, onion  powder, salt, and black pepper.

I had it with some pork panko turkey burgers.  Here's the recipe for them.

Ingredients:

  • 1 package ground turkey (about 2 lbs.)
  • 1/4 onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • dash of salt
  • dash of ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 Tablespoon dried parsley
  • pork panko to coat

Instructions:

  1. Mix all ingredients above, except pork panko.
  2. Press balls of turkey mixture onto pork panko.
  3. Air fry for 20 minutes at 380 degrees.

Tortang Talong with Pork Panko

This is roasted eggplant with the skins peeled off, then coated in pork panko, air fried, and served with a tomato/fish sauce salsa.  This is a spin off the regular tortang talong dish with a delicious crispy crust.

If you're interested in the regular tortang talong recipe, you can view it here: https://www.abundanceofvegetables.com/2020/06/tortang-talong-fire-roasted-battered.html

Here's the recipe for this pork panko version. I have not listed measurements for this as you use as much panko as you need to coat the amount of eggplants you'd like to cook.  The tomato/fish sauce salsa is optional, but is a traditional side to tortang talong.

Ingredients for eggplant:
  • long eggplants
  • pork panko
Ingredients for tomato/fish sauce salsa:
  • diced tomatoes
  • fish sauce, to taste
Instructions:
  1. Rinse eggplants.
  2. Poke holes through eggplant skins, all around.
  3. Air fry for 20 minutes at 400 degrees, flipping halfway through.
  4. Put eggplant in a closed container and let sweat for about 10 minutes.
  5. Peel skins off eggplant and discard.
  6. Flatten eggplant with a fork.
  7. Coat eggplant with pork panko.
  8. Lay pork panko coated eggplants in air fryer pan, making sure not to overlap. Lining your airfryer helps with sticking.
  9. Air fry for 20 minutes at 400, flipping halfway through.
  10. Serve with diced tomatoes and fish sauce.
  11. Enjoy!

Easy Air Fried Eggplant

I made this with just three ingredients.  One of my friends gifted me a package of pork panko and I’ve been experimenting cooking with it. This is one of the recipes.

Ingredients:

  • 2 eggplants
  • 1 egg
  • pork panko (ground bread crumbs - enough to coat eggplant)
 Instructions:
  1. Rinse eggplants.
  2. Slice into half-inch pieces.
  3. In a separate container, beat egg.
  4. In a separate container, pour out some pork panko.
  5. Dip eggplant pieces in egg, then in pork panko.
  6. Air fry for 15 minutes at 380 degrees.
  7. Enjoy!

Air Fried Panko Curry Tofu

This experiment turned out great!  I remember doing some tofu cooking experiments years ago.  One of them involved freezing the tofu to dry it out.  This was supposed to help it get a texture closer to meat.  I don't remember if I liked that recipe or not.  But I remember the first step was to press the tofu down to get out as much liquid as possible.  I did that for this recipe.  I wasn't necessarily trying to get a meat texture, but I wanted to make the tofu firmer to withstand what I was about to put it through.

Tofu is pretty bland and will take on any kind of flavor you add to it.  The curry powder added just a light curry flavor.  In retrospect, I would've preferred the curry flavor as a sauce added after air frying.  Regardless, this was still delicious.  So that idea is another experiment that I'll try next time.

If you want to try this, here's the recipe.

Ingredients:
  • 1 block tofu
  • 2 eggs
  • 1 Tablespoon curry powder
  • sprinkle of dried parsley
  • Panko (Japanese breadcrumbs)
  • Avocado oil spray
Instructions:
  1. Open and drain tofu.
  2. Cut block of tofu evenly into four rectangles.
  3. Lay paper towels on a baking pan.
  4. Spread tofu rectangles onto paper towels.
  5. Cover tofu with another layer of paper towels.
  6. Add another pan onto the paper towel-covered tofu.
  7. Add something on top to weigh it down and help the liquid get squeezed out of the tofu. (I used a bottle of olive oil and left it for about ten minutes)
  8. Remove weight and paper towels.
  9. Beat eggs.
  10. Add curry powder and dried parsley to eggs and beat again to combine.
  11. Pour panko into a separate bowl.
  12. Dip pieces of tofu into egg mix, then panko, and repeat, coating all sides.
  13. Spray all sides of panko-coated tofu with avocado oil.
  14. Air fry for 15 minutes at 400 degrees.
  15. Enjoy!

Air Fried Panko Okra

I got a bunch of okra from my aunt.  I made it two different ways and this is one of them.  It's a spin off my most popular video recipe, which is the Air Fried Ranch Panko Chicken Tenders.

The okra turned out with a golden brown crispy outer layer, perfectly tender on the inside, with a hint of slime. Delicious!

I enjoyed these and like this breed of okra.  I have been growing some in my container garden and the breed I have is more fibrous.  Mine need to be picked super young and small so it doesn't get too fibrous.  Fiber sounds good for your health, but fiber isn't very palatable. 😛

Here's my recipe for Air Fried Panko Okra.  It tastes great alone, but is also neutral enough if you'd like to have it with your favorite dipping sauce.  I had it with ketchup and it was like fries. I wondered if I should call them Okra Fries instead.

Ingredients:
  • 4-5 cups okra, rinsed, ends chopped off, sliced in halves lengthwise
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 dash salt
  • 1 dash pepper
  • 1 teaspoon dried parsley
  • Panko (Japanese breadcrumbs)
  • Avocado Oil Spray
Instructions:
  1. Prepare okra as indicated above (rinse, chop, slice). Set aside.
  2. Crack eggs into a bowl.
  3. Add garlic powder, salt, pepper, and parsley to eggs and scramble.
  4. Pour egg mixture over okra and toss well to coat. Set aside.
  5. Pour half bag of panko into a resealable container.
  6. Add egg-coated okra to panko.
  7. Pour remaining panko over okra.
  8. Seal container and shake vigorously.
  9. Place panko-coated okra in a single layer of air fryer pan.
  10. Spray with avocado oil.
  11. Air fry for 15 minutes at 400 degrees.
  12. Serve.
