Air Fried Chinese Style Flash Fried Fish

The traditional way to make this dish is to steam the fish.  I did it a little different.  I wrapped the fish in foil and air fried it.  Here is the link to the original recipe which my inspiration came from: https://www.allrecipes.com/recipe/140570/steamed-fish-with-ginger/

I basically did the same thing but air fried the fish for 15-20 minutes at 400 degrees instead of steaming.  The heat circulates within the foil pocket and cooks it perfectly.

Zoodle Carbonara Experiment

This was an experiment to use vegetables in place of pasta.  For that, I took a zucchini, cut the ends off  and ran it through a spiralizer.  I made a mistake with miscounting the egg yolks and used processed cheese instead of fresh.  It came out okay, but would've probably been better if I counted correctly and used freshly grated parmesan cheese.  I intend to try this again with those corrections.

Here is the link to the original recipe. https://www.bonappetit.com/recipe/simple-carbonara

Lemon Butter Garlic Fish

I had a lemon in my fridge that was starting to get old and shribbly.  Shribbly is not even a real word. 😜I wanted to make something with this lemon and this is what I came up with.

  • 2 fillets flounder
  • dash of salt
  • dash of pepper
  • 2 cloves garlic, chopped
  • 1 lemon, sliced
  • 3 Tablespoons butter

  2. Place on foil so you can wrap it shut and keep the heat in.
  3. Season fillets with salt and pepper on both sides.
  4. Evenly distribute chopped garlic, lemon slices, and butter.
  5. Fold foil over to keep heat in.
  6. Air fry for 20 minutes at 400 degrees.
  7. Serve with sides of your choice. ( I had mixed greens and cauliflower rice).

Tortang Talong with Pork Panko

This is roasted eggplant with the skins peeled off, then coated in pork panko, air fried, and served with a tomato/fish sauce salsa.  This is a spin off the regular tortang talong dish with a delicious crispy crust.

If you're interested in the regular tortang talong recipe, you can view it here: https://www.abundanceofvegetables.com/2020/06/tortang-talong-fire-roasted-battered.html

Here's the recipe for this pork panko version. I have not listed measurements for this as you use as much panko as you need to coat the amount of eggplants you'd like to cook.  The tomato/fish sauce salsa is optional, but is a traditional side to tortang talong.

Ingredients for eggplant:
  • long eggplants
  • pork panko
Ingredients for tomato/fish sauce salsa:
  • diced tomatoes
  • fish sauce, to taste
Instructions:
  1. Rinse eggplants.
  2. Poke holes through eggplant skins, all around.
  3. Air fry for 20 minutes at 400 degrees, flipping halfway through.
  4. Put eggplant in a closed container and let sweat for about 10 minutes.
  5. Peel skins off eggplant and discard.
  6. Flatten eggplant with a fork.
  7. Coat eggplant with pork panko.
  8. Lay pork panko coated eggplants in air fryer pan, making sure not to overlap. Lining your airfryer helps with sticking.
  9. Air fry for 20 minutes at 400, flipping halfway through.
  10. Serve with diced tomatoes and fish sauce.
  11. Enjoy!

Health Update 9/20/2020

I decided to separate and make this a separate post instead of with a food post the way it was.

Besides my cooking experiments, I'm also using this blog to write about my health status.  That was the whole inspiration behind my efforts to enjoy an abundance of vegetables in the first place.  Here's my post about it: https://www.abundanceofvegetables.com/2019/10/my-inspiration-for-abundance-of.html

Today (9/20/2020), I weigh 155 pounds.  Per the body mass index calculator, I rate 29.3, which is overweight borderline obese. I don't feel like I'm borderline obese, but I agree that I'm overweight.

I have been consciously trying to exercise 30 min/day, at least 5x a week and do more dumbbell exercises for weight resistance.

I went to the doctor yesterday for a follow-up visit to check on my blood pressure and cholesterol.

Blood pressure was within normal levels. Cholesterol was good overall, good LDL, good HDL, but my triglycerides were high. I don’t normally eat a lot of sweets or fruits and had issues with this before. She thinks it’s because it’s hereditary and prescribed a high quality fish oil supplement to assist me with this.

My doctor noticed ketones in my results and knew that I had been practicing intermittent fasting. She was pleased with my progress. So am I. 😃

Air Fried Sweet Potato Fries

I was inspired by some food posts I had seen of sweet potatoes being used as the "bread" in an open face type of sandwich.  They were sliced lengthwise to create flat surfaces for toppings.  I bought a sweet potato then never got around to using it for that.

The sweet potato started getting impatient with me and I got on its last nerve because it was waiting so long.  It started growing a branch. Lol!  So I wanted to make something quick and easy with it.  I found a recipe for sweet potato fries online and it turned out great.

You just cut it up, toss it up with oil and seasonings, and air fry for 20 minutes at 380 degrees.  The texture came out like potato wedges, with just a tad bit of crispiness.  Here is the link to the original recipe: https://www.apinchofhealthy.com/air-fryer-sweet-potato-fries/

Lemon Butter Garlic Basil Shrimp Salad

If you had a salad like this at a restaurant, you'd probably get less shrimp.  I was cleaning out my fridge and getting rid of older stuff to make room for new stuff.  I don't want to keep hoarding stuff.  This shrimp was originally purchased to be used as bait for fishing.  It never happened.  Suck it up, move on, cook the shrimp, and eat it. 😁

Air Fried Fish

I bought a package of flounder fish fillets from Costco.  I never ate flounder before so I was taking a chance.  It has a light, flaky texture and it is fine.  The recipe I used for my first taste of flounder is from www.beautyandthebenchpress.com.  She has a recipe for crispy, battered, air fried fish.  It turned out delicious.  The only things I did differently was not cut it up into sticks and added some dried parsley to the batter.  Here's the link to her original recipe: https://beautyandthebenchpress.com/air-fryer-fish-sticks/

Cucumber Sandwiches

My buddy made these cucumber sandwiches and I decided to film her making them.  I don't have the recipe. But the ingredients include mayonnaise, cream cheese, salt, pepper, dill, and garlic powder, bread, and cucumbers. Basically, you slice the cucumbers up, slice the crusts off the bread, and cream the rest of the ingredients to be the glue to the sandwich.  Delicious!

Gochujang Cucumbers

My buddy had a bunch of cucumbers and gave me some.  I wasn't sure what to make with them and found a recipe online for gochujang cumbers.  It was quick and easy to prepare.  I added some hot chili oil and chopped them up instead of slicing.  I enjoyed it and ended up buying more cucumbers and making this again after I ate the first batch.

Here is the link to the original recipe from cooking with a wall flower. https://cookingwithawallflower.com/2020/04/08/gochujang-cucumbers/

Bell Pepper Relleno Experiment

Chili relleno is traditionally made with chilis, dipped in a batter consisting of flour, and fried in oil.  For this experiment,  I airfried green bell peppers, peeled the skins, removed the seeds and stems, and pan fried them with an egg mixture.  They were just okay.  But here's my recipe if you want to try this version.  Maybe you can make it better.  If so, share your secrets to the improvements with me.  I'd like to know.  Thanks!

Ingredients:
  • 6 green bell peppers
  • 3 eggs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 dash salt
  • 1 dash ground black pepper
  • 1 cup shredded cheese (I used colby and monterey jack)
  • 2 Tablespoons avocado oil
  • Salsa
Instructions:
  1. Rinse bell peppers.
  2. Air fry at 400 for 20 minutes, flipping over halfway through.
  3. Place into closed container for about 10 minutes to sweat.
  4. Peel skins off, remove seeds and stems.
  5. Put cheese in each bell pepper.
  6. In a separate bowl, beat eggs with garlic powder, onion powder, salt, and pepper.
  7. Coat bell peppers in egg mixture.
  8. Add avocado oil to hot pan.
  9. Add bell peppers and cover.

Easy Air Fried Pumpkin

I love roasted pumpkin and tried air frying it this time.  It turned out better.  I really like the faster cook time, and the crispier, drier texture.  By dry, I don't mean that it's dried out.  I mean that it doesn't get soggy the way it does in the oven.  Any who, here's my recipe.

Ingredients:
  • 1 bag precut pumpkin (you can cut your own up if you prefer)
  • 5 Tablespoons olive oil
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • dash of salt
  • dash of pepper
Instructions:
  1. Put pumpkin in a bowl.
  2. Add remaining ingredients.
  3. Toss.
  4. Arrange in air fryer pan so that pieces are not overlapped.
  5. Air fry at 400 for 20 minutes.
  6. Enjoy!
