I was inspired by some food posts I had seen of sweet potatoes being used as the "bread" in an open face type of sandwich. They were sliced lengthwise to create flat surfaces for toppings. I bought a sweet potato then never got around to using it for that.
The sweet potato started getting impatient with me and I got on its last nerve because it was waiting so long. It started growing a branch. Lol! So I wanted to make something quick and easy with it. I found a recipe for sweet potato fries online and it turned out great.
You just cut it up, toss it up with oil and seasonings, and air fry for 20 minutes at 380 degrees. The texture came out like potato wedges, with just a tad bit of crispiness. Here is the link to the original recipe: https://www.apinchofhealthy.com/air-fryer-sweet-potato-fries/

Today (9/20/2020), I weigh 155 pounds. Per the body mass index calculator, I rate 29.3, which is overweight borderline obese. I don't feel like I'm borderline obese, but I agree that I'm overweight.
I have been consciously trying to exercise 30 min/day, at least 5x a week and do more dumbbell exercises for weight resistance.
I went to the doctor yesterday for a follow-up visit to check on my blood pressure and cholesterol.
Blood pressure was within normal levels. Cholesterol was good overall, good LDL, good HDL, but my triglycerides were high. I don’t normally eat a lot of sweets or fruits and had issues with this before. She thinks it’s because it’s hereditary and prescribed a high quality fish oil supplement to assist me with this.
My doctor noticed ketones in my results and knew that I had been practicing intermittent fasting. She was pleased with my progress. So am I. 😃
