Shrimp Sinigang

Ingredients:

  • 1 pound shrimp, peeled
  • 2 eggplants, cut into 2-inch sections
  • 1 bunch long beans, cut into 2-inch sections
  • 1 can straw mushrooms
  • 1 medium onion, sliced
  • 2-3 cloves garlic, chopped
  • 5 cherry tomaotes
  • 1 Tablespoon fish sauce
  • 2 Tablespoons oil 
  • 1 teaspoon ground pepper
  • 1/2 cup water

Instructions:

  1. Rinse and prep eggplant and beans (cut)
  2. Prep onion and garlic (slice, chop)
  3. Drain can of mushrooms. 
  4. Peel shrimp, if need peeling.
  5. Heat pan.  Add oil, onion, and garlic.  Stir fry until fragrant.
  6. Add eggplant, cover and let cook about 10 minutes.
  7. Add tomatoes, mushrooms, and water. Cover and let cook about 10 minutes.
  8. Add long beans, shrimp, and cracked black pepper.  Cover and let cook about 10-15 minutes, stirring every so often.
  9. Enjoy!

Zoodles with marinara turkey sauce

 


I've been eating low-carb so I made some noodles with zucchini aka zoodles.  I used ground turkey for the meat in the marinara sauce.  It was a 4-pack of 93% lean Butterball brand ground turkey from Costco.  I don't particularly like it because it seems like it's watered down but I'll eat it since I bought it.  I didn't include additional salt because there's already salt in the tomatoes and the flavor was seasoned enough to my liking.

Ingredients:

  • 2 zucchini, zoodled
  • 2 bunches basil, chopped
  • 1 package ground turkey
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 5 sun dried tomatoes, chopped
  • 2 cans tomato sauce
  • 1 can chopped fire roasted tomatoes
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon dried oregano

Instructions:

  1. Wash the zucchini and basil and set aside to drain.
  2. Brown ground turkey.
  3. Prep garlic, onions, and sun dried tomatoes (mince, chop) and add to browned turkey.
  4. Add red pepper flakes, oregano, tomato sauce, and chopped tomatoes, and let simmer.
  5. Prep zucchini (zoodle machine) and chop basil.
  6. Add some basil to sauce and continue to simmer while prepping the noodles.
  7. Place some zoodles in your dish, top with turkey sauce, garnish with a sprinkle of basil.
  8. Enjoy!

Laulau with beef and salmon

 


This is easy, it just takes a long time to cook.

Ingredients:

  • luau leaves
  • filling of choice (I used beef and salmon)
  • hawaiian salt

Instructions:

  1. Rinse luau leaves.
  2. Cut stems off, strip skins off, cut into 2-3 inch pieces.
  3. Stack several leaves from big to small, in the same direction.
  4. Add filling, some stems, and hawaiian salt to the middle and wrap it up.
  5. Wrap with ti leaf or foil.
  6. Steam for 3-4 hours.
  7. Enjoy!

Ranch Zucchini with Pork Panko

  

Here's a quick vegetable side dish.  I cut up a zucchini  into long wedges, tossed in olive oil and ranch dressing, then sprinkled some pork panko over it for some crunch.  Easy peasy.

Ingredients:

  • 1 zucchini
  • 2 Tablespoons olive oil
  • 2 Tablespoons ranch powder
  • 2 T pork panko

Instructions:

  1. Rinse zucchini, chop ends, and chop into long wedges.
  2. Add olive oil and ranch powder and toss to coat with flavor.
  3. Sprinkle pork panko over for crunch.
  4. Spread in a single layer on pan.
  5. Airfry for 15 min at 400 degrees.
  6. Serve and enjoy!

Paleo Stuffed Bell Peppers

This turned out so yummy. I highly recommend. I had to eat it cold one day because I didn't have a microwave. That wasn't the greatest experience, but oh well.  Lol!
