Spam & Veggie Stir Fry

 

I gathered an assortment of ingredients in my kitchen and made this dish happen.  I had a bit of baby bell peppers left over from another recipe, cauliflower in the freezer, spam and rice from the cabinet as well as seasonings, and I always have onions and garlic on hand. This would work with any combination of veggies you have.

Ingredients:

  • 3 cloves garlic, chopped
  • 1 medium onion, sliced
  • 2 cups baby bell peppers, chopped into bite-size pieces
  • 3 ounces spam, cut into cubes
  • 1 bag frozen cauliflower
  • 2 Tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • Scrunch of pepper
  • 2 Tablespoons chopped green onion
  • Sesame seeds (for garnish)

Instructions:

  1. Prepare ingredients as indicated above (chop, slice, etc.)
  2. Add spam to heated skillet. Stir fry.
  3. Add remaining ingredients (except sesame seeds) and stir fry until cauliflower defrosted and warmed through and onions and bell peppers slightly softened.
  4. Garnish with sesame seeds and serve with rice.
  5. Enjoy

Paleo Stuffed Bell Peppers

This turned out so yummy. I highly recommend. I had to eat it cold one day because I didn't have a microwave. That wasn't the greatest experience, but oh well.  Lol!

Roasted Bell Pepper Hummus

 

My dad harvested some red bell peppers from his home garden for me.  I got a lot of goodies from his garden so couldn't eat them all in time.  I cleaned, prepped and freezed them for later use. I cut them in two different styles with the intention of adding them to chili and a stir fry.  However, I ended up using them to make roasted red bell pepper hummus.

I used lime instead of lemon because that's what I had on hand and added a bit more olive oil because I wanted the texture smoother. I also air fried my bell pepper and didn't peel off the skin.

Bell Pepper Relleno Experiment


Chili relleno is traditionally made with chilis, dipped in a batter consisting of flour, and fried in oil.  For this experiment,  I airfried green bell peppers, peeled the skins, removed the seeds and stems, and pan fried them with an egg mixture.  They were just okay.  But here's my recipe if you want to try this version.  Maybe you can make it better.  If so, share your secrets to the improvements with me.  I'd like to know.  Thanks!

Ingredients:
  • 6 green bell peppers
  • 3 eggs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 dash salt
  • 1 dash ground black pepper
  • 1 cup shredded cheese (I used colby and monterey jack)
  • 2 Tablespoons avocado oil
  • Salsa
Instructions:
  1. Rinse bell peppers.
  2. Air fry at 400 for 20 minutes, flipping over halfway through.
  3. Place into closed container for about 10 minutes to sweat.
  4. Peel skins off, remove seeds and stems.
  5. Put cheese in each bell pepper.
  6. In a separate bowl, beat eggs with garlic powder, onion powder, salt, and pepper.
  7. Coat bell peppers in egg mixture.
  8. Add avocado oil to hot pan.
  9. Add bell peppers and cover.
  10. Cook for 20 minutes, flipping halfway through.
  11. Serve with salsa.
  12. Enjoy!

Sausage, Egg, Bell Pepper, Onion Breakfast Burritos


So breakfast burritos was not my original plan when I bought the ingredients.  I actually was planning to make an omelet stuffed with bell peppers, onions, mushrooms, and sausage.  But when I reached home, I realized I had some tortillas.  So breakfast burritos it was.

Here's how my recipe went.  It makes probably about 10 burritos.  I like to cook in big batches so it lasts a while.

Ingredients:
  • 7 crimini mushrooms, sliced
  • 1 small green bell pepper, seeded and chopped
  • 1/2 onion, sliced
  • 1 box turkey sausages, sliced (10 sausages)
  • 4 eggs, scrambled
  • tortillas
  • olive oil
Instructions:
  1. Prepare ingredients as indicated above (chop, slice)
  2. Heat pan and add olive oil.
  3. Add mushrooms, bell pepper, and onion. Stir fry until cooked.
  4. Add scrambled eggs and stir until cooked through.
  5. Add desired amount of mixture onto a tortilla.
  6. Serve

Air Fried Bell Peppers with Oil & Vinegar


Here's a simple recipe for Air Fried Bell Peppers with Olive Oil & Vinegar.  I don't have much else to say about it.

Ingredients:
  • 1 yellow bell pepper, seeded and cut into 1/2 inch pieces
  • 1 red bell pepper, seeded and cut into 1/2 inch pieces
  • 1 orange bell pepper, seeded and cut into 1/2 inch pieces
  • 1/2 red onion, cut into 1/2 inch pieces
  • 1 head garlic, peeled
  • 2 Tablespoons garlic infused olive oil
  • 2 Tablespoons balsamic vinegar
Instructions:
  1. Prepare ingredients as described above (seed, cut, peel).
  2. Combine all ingredients and toss.
  3. Air fry at 400 degrees for 20 minutes. 
  4. Serve.
