Sausage, Egg, Bell Pepper, Onion Breakfast Burritos


So breakfast burritos was not my original plan when I bought the ingredients.  I actually was planning to make an omelet stuffed with bell peppers, onions, mushrooms, and sausage.  But when I reached home, I realized I had some tortillas.  So breakfast burritos it was.

Here's how my recipe went.  It makes probably about 10 burritos.  I like to cook in big batches so it lasts a while.

Ingredients:
  • 7 crimini mushrooms, sliced
  • 1 small green bell pepper, seeded and chopped
  • 1/2 onion, sliced
  • 1 box turkey sausages, sliced (10 sausages)
  • 4 eggs, scrambled
  • tortillas
  • olive oil
Instructions:
  1. Prepare ingredients as indicated above (chop, slice)
  2. Heat pan and add olive oil.
  3. Add mushrooms, bell pepper, and onion. Stir fry until cooked.
  4. Add scrambled eggs and stir until cooked through.
  5. Add desired amount of mixture onto a tortilla.
  6. Serve

Un Choy Chicken Stir fry


This dish was quick and easy to make. I usually get Bok Choy, but this time I wanted to try a different kind of Choy. They’re both great.  I’m actually growing some baby Bok Choy in my container garden from some seeds I got for Christmas from a good friend. They’re growing well so far. I just hope the bugs don’t get to them before I do.

Here’s the recipe for my un choy chicken stir fry.  I enjoyed it with cauliflower rice.

Ingredients:
  • 2 chicken tenderloins, sliced into bite-sized pieces
  • 1/2 yellow onion, sliced
  • 7 cloves garlic, sliced
  • 5 cups un choy, chopped into 2" sections
  • olive oil for cooking
  • dash of crushed red pepper, pressed between fingers to release oils
  • 1/4 cup oyster sauce
  • sprinkle of sesame seeds
Instructions:
  1. Stir fry garlic in olive oil until fragrant.  Remove from oil.
  2. Stir fry chicken until browned.  Remove from oil.
  3. Add un choy, onion, and oyster sauce.  Stir fry until wilted.
  4. Add crushed red pepper and sesame seeds. Stir.
  5. Serve with rice or cauliflower rice.

Super Spicy Chicken Fajitas


I like spicy foods.  So when I cooked this, I added several ingredients to add heat.  Well, it turned out super spicy.  It's not pictured here, but I added some sour cream and that helped ease the burn. Lol!

Anyway, here's the recipe for what I made.  You have been warned, it is super spicy.

Ingredients:
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/4 cup olive oil
  • 1 Tablespoon chili powder
  • 1 Tablespoon garlic powder
  • 1 Tablespoon cumin
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne
  • 1 Tablespoon red pepper flakes
  • 7 cloves garlic, sliced
  • 3 chicken tenderloins, sliced into bite-sized pieces
  • 1/2 yellow onion, sliced
  • torillas
Instructions:
  1. Prepare ingredients as listed above (slice).
  2. Toss bell peppers with olive oil, chili powder, garlic powder, cumin, onion powder, cayenne and red pepper flakes.
  3. Air fry for 15 minutes at 400 degrees.
  4. While the bell peppers are air frying, heat olive oil and stir fry the garlic.  Remove garlic from pan and set aside.
  5. Add chicken to pan and stir fry until browned.  Add onion an air fried bell peppers and mix thoroughly.
  6. Place desired amount of fajita mixture on tortilla.
  7. Serve.

Longsilog with Cauliflower Rice

 

I love silog.  I only learned what that meant a couple months ago.  It's a prefix of the name for any dish that comes with eggs and rice.  Some examples that I've seen are longsilog, spamsilog, bangussilog, and I've made a talongsilog before.


This time I made longsilog.  But instead of regular rice, I used cauliflower rice, which is cauliflower chopped into tiny pieces.  Long is for longanisa and silog is for eggs and rice.  Longanisa a small filipino sausage that comes in different versions like sweet, original, and vinegar.  I like the sweet one the most.

Air Fried Brussels and Bacon


I recently found out that the link I had on my Instagram bio wasn't working.  I don't know when it started being faulty.  Sorry about that.  It should be working now.

I love making things with a small amount of ingredients.  This one just calls for three.  All the flavor comes from the bacon. Mmm, mmm, mmm.

Ingredients:
  • 1/2 package bacon
  • 2 cups brussels sprouts (rinsed, trimmed, and cut in half)
  • 1/4 large red onion, chopped
Instructions:
  1. Place bacon in air fryer pan in one layer and air fry for 10 minutes at 400 degrees.
  2. Remove bacon and cut into 1/4 inch pieces.
  3. Pour bacon fat from air fryer onto brussels sprouts.
  4. Add chopped onions and chopped bacon.
  5. Toss everything together well.
  6. Put it all in the air fryer and air fry for 20 minutes at 400 degrees, shaking halfway through.
  7. Serve.

Enoki, Bok Choy, Garlic & Sausage Stir Fry


This is a super simple 4-ingredient dish that I put together with random things I had in the fridge.  It's winter and I have been cold a lot, so naturally, I want to eat warm soup.  I bought bok choy and mushrooms with the intent of eating it with a soup.  I added some to a saimin, but then didn't want to eat saimin again and wasn't sure what kind of broth to make to eat the rest.

I didn't want the rest to go to waste.  So, that's when I came up with this stir fry idea.  I've never had stir fried enoki mushrooms, but figured I give it a try.  It was delicious.  I only used four ingredients.  The vegetables are seasoned with the flavors from the sausage.

Here's my recipe.

Ingredients:
  • 1 Portuguese sausage, 5 ounces, sliced into coins
  • 2 baby bok choy, chopped
  • 1 bunch enoki mushrooms, about 5 ounces, chopped into 2-inch pieces, discard roots
  • 5 cloves of garlic, sliced
Instructions:
  1. Prepare ingredients as described above (slice, chop, etc.)
  2. Stir fry Portuguese sausage until it forms brown edges.
  3. Add garlic, bok choy, and mushrooms.
  4. Stir fry until bok choy and mushrooms have wilted.
  5. Serve.
