Spicy Nacho Spinach Dip

I added spinach to this for some added vegetables.  To be honest, it's not the greatest addition (taste-wise), but I like to know that I'm eating more veggies.

Ingredients:

  •  2 cups bell peppers, chopped
  • 1 medium onion, chopped
  • 1 can tomato sauce
  • 1 can pinto beans
  • 1 bag frozen, chopped spinach
  • 3 chipotle peppers in adobo sauce
  • 5 large cherry tomatoes, chopped
  • 1 avocado, chopped
  • greek yogurt or avocado

Instructions:

  1. Brown ground beef.
  2. While beef is browning, prep taco seasoning (you can use a pre-made seasoning packet instead).
  3. Clean and chop bell peppers and onions.
  4. Add taco seasoning to browned ground beef and stir in.
  5. Add bell peppers and onions, stir, and continue to cook until softened.
  6. Cut avocado and tomatoes and set aside.
  7. Add tomato sauce, chipotle peppers, and spinach to beef. Stir and simmer for about ten minutes.
  8. Rinse beans and set aside.
  9. Plate the spicy nacho dip.
  10. Top with pinto beans, tomatoes, avocado, and greek yogurt.
  11. Serve with tortilla chips.
  12. Enjoy!

Kabocha Pumpkin Fest

My grandma harvested a pumpkin from her garden for us.  I made some air fried pumpkin, then also some spicy pumpkin salad with it. Yum!

Korean Style Soup

This is my take on a Korean Style Soup.  The tofu I used was soft, but not the tube-shaped style that is typically used in soondubu.  It came in a tray.  I don't have a special cooking stone bowl pot, so I had to cook the soup in a regular pot as well as the egg.  When this is served to me in the restaurant, they give the egg to you to crack into the soup yourself.

Ingredients:
  • 2 Tablespoons canola oil
  • 5 cloves garlic, chopped
  • 1/2 cup green onions, chopped
  • 1/2 yellow onion, chopped
  • 3 ounces pork belly, chopped
  • 4 Tablespoons Korean red pepper powder
  • 2 Tablespoons sesame oil
  • 2 Tablespoons oyster sauce
  • 2 Tablespoons shoyu (soy sauce)
  • 2 cups water
  • 1/2 cup kim chee, chopped
  • 3 ounces mushrooms
  • 1 cup bok choy
  • 2 eggs
Instructions:
  1. Prepare ingredients as described above (chop)
  2. Heat canola oil in pot.
  3. Add garlic, green onions, and yellow onions to the oil and stir fry until fragrant.
  4. Add pork belly, stir fry, and cook well.
  5. Add Korean red pepper powder, sesame oil, oyster sauce, soy sauce and stir.  Let simmer for a few minutes to let the flavors come together.
  6. Add water and bring to a boil.
  7. Add kim chee and stir.
  8. Add mushrooms and bok choy.  Push it under the soup and bring to boil.
  9. Crack eggs directly into soup and let it sit until the whites of the egg turn white.
  10. Serve immediately.
  11. Enjoy!

Super Spicy Chicken Fajitas

I like spicy foods.  So when I cooked this, I added several ingredients to add heat.  Well, it turned out super spicy.  It's not pictured here, but I added some sour cream and that helped ease the burn. Lol!

Anyway, here's the recipe for what I made.  You have been warned, it is super spicy.

Ingredients:
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/4 cup olive oil
  • 1 Tablespoon chili powder
  • 1 Tablespoon garlic powder
  • 1 Tablespoon cumin
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne
  • 1 Tablespoon red pepper flakes
  • 7 cloves garlic, sliced
  • 3 chicken tenderloins, sliced into bite-sized pieces
  • 1/2 yellow onion, sliced
  • torillas
Instructions:
  1. Prepare ingredients as listed above (slice).
  2. Toss bell peppers with olive oil, chili powder, garlic powder, cumin, onion powder, cayenne and red pepper flakes.
  3. Air fry for 15 minutes at 400 degrees.
  4. While the bell peppers are air frying, heat olive oil and stir fry the garlic.  Remove garlic from pan and set aside.
  5. Add chicken to pan and stir fry until browned.  Add onion an air fried bell peppers and mix thoroughly.
  6. Place desired amount of fajita mixture on tortilla.
  7. Serve.

Air Fried Spicy Pumpkin Salad

Smooth - Wrapped in foil and chopped after air frying

More Texture - Chopped prior to air frying

I have made this recipe before.  I was thinking it would be like a spicy potato salad, but with pumpkin instead of potatoes.  It turned out great and I love the bite of the raw onion and garlic.  If you love onions, garlic, and spice, you'll probably love this dish.

The last time I made this, I chopped the pumpkin prior to roasting it in the air fryer.  This gave more texture to the pumpkin pieces and more mouthfeel.

This time, I wrapped the pumpkin in foil and chopped it after air frying.  This way is smoother, more similar in texture to an actual potato salad.

Either way is delicious.  It just depends on your preference.  I like both.  Recipe and instructions below are fore the smoother version.

Ingredients:
  • 1/2 kabocha pumpkin, seeded
  • 1/2 c mayonnaise
  • 1/4 c green onion, chopped
  • 1/2 c red onion, chopped
  • 7 cloves garlic, chopped
  • 1 dash dried parsley
  • 1 dash cayenne pepper
  • 1 dash black pepper
  • 2 Tablespoons avocado oil
Instructions:
  1. Prepare ingredients as described above (seed, chop).
  2. Rub avocado oil all over the pumpkin.
  3. Wrap oiled pumpkin in foil and air fry for 30 minutes at 400 degrees.
  4. Let pumpkin cool.
  5. Combine remaining ingredients in bowl and mix well.
  6. Cut cooled pumpkin into 1-inch cubes.
  7. Add pumpkin to spicy mixture and mix well.
  8. Serve.
