Scallion Oil Noodles

 

I had been seeing these scallion oil noodles on social media and had to try it since I had a ton of scallions from the onion harvest in my parents' garden.   This dish turned out super delicious.  I had several meals out of the one package of noodles.  I tried a variation with scrambled eggs, but it wasn't as good.  I think basically any type of protein would work great with this.  I just needed some kind of protein in there.

I've seen different variations of this dish online.  This is what I went with.

Ingredients:

  • 1 quart bag 3-inch pieces of scallions
  • 1 cup olive oil
  • 2 Tablespoons white sugar
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon oyster sauce
  • 1 bunch somen noodles
  • 1 egg
  • dash of sesame seeds (optional for garnish)

 Instructions:

  1. Heat olive oil in pan on low/medium heat.
  2. Add scallions to oil and flip over frequently to cook evenly.
  3. Boil water, cook noodles according to package directions, and drain.
  4. Fry egg
  5. When scallions are done, remove from oil and turn off heat.
  6. Add sugar, soy sauce and oyster sauce to oil and stir well.  This is your scallion oil.
  7. Add drained noodles to bowl.
  8. Add enough scallion oil to coat noodles and mix well.
  9. Top with fried scallions, fried egg, and sesame seeds.
  10. Enjoy!

Tempeh with Peanut Butter Noodles

 

This was my first time trying tempeh.  I read up on it a bit before buying.  Supposedly, it's slightly bitter and boiling it in a broth helps to get rid of this bitterness.  Marinating it in a barbecue sauce seemed like the most common way to prepare it, so I opted for this method.  

Overall, I'd say this was just okay.  I didn't particularly enjoy the texture or flavor, so the barbecue and peanut butter flavors helped it a ton.  I don't recommend tempeh and don't think I'll be buying it again unless I come across a tempting recipe.  That's just my personal opinion and preference,  but if you want to try what I made, the recipe is as follows.

Ingredients:

  • 1 package tempeh
  • 2-3 cups chicken broth
  • 1/2 cup sriracha garlic barbecue sauce
  • 1 package shirataki pasta (7 oz)
  • 1/2 cup peanut butter
  • 3 Tablespoons soy sauce
  • 1 Tablespoon sugar
  • 1/2 teaspoon red pepper flakes
  • 1 Tablespoon lime juice
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon sesame oil
  • 1/4 cup water
  • 3 Tablespoons cilantro for garnish

Instructions:

  1. Bring chicken broth to a boil.
  2. Add tempeh to broth and boil for 15 minutes.
  3. Remove tempeh from broth and slice into bite-size strips.
  4. Coat with barbecue sauce and marinate overnight.
  5. Arrange tempeh out on air fryer pan.
  6. Air fry for 20 minutes at 400 degrees, flipping halfway through.
  7. Drain and rinse noodles.
  8. Combine remaining ingredients (except cilantro) and mix well to create peanut butter sauce.
  9. Top noodles with peanut butter sauce, a few pieces of tempeh, and garnish with cilantro.
  10. Enjoy!

Garlic Butter Carving Pumpkin Innards

  

My buddy and I carved a pumpkin for her daughter.  While gutting it, I noticed the innards looked like spaghetti squash.  So I decided to save them and try to cook it as a side dish.  Long story short, it was not delicious.  Butter garlic flavor is not enough.  It needs a stronger flavor combo as it's pretty tasteless and doesn't even take flavor on.  I think this experiment might be good with a thick, heavy sauce if you wanted a gluten-free option.

This recipe is not worth typing out, especially since it didn't turn out that great.  It's just butter, garlic, salt, and pumpkin innards. But you can watch me make it.

Zoodle Carbonara Experiment

This was an experiment to use vegetables in place of pasta.  For that, I took a zucchini, cut the ends off  and ran it through a spiralizer.  I made a mistake with miscounting the egg yolks and used processed cheese instead of fresh.  It came out okay, but would've probably been better if I counted correctly and used freshly grated parmesan cheese.  I intend to try this again with those corrections.

Sardines with Spinach and Noodles


I got a suggestion from one of my Instagram followers, @vokullove_carter, to try making a recipe with canned sardines.  So here it is.   It was quick and easy and only required six ingredients.

I have eaten this is the past without the spinach, but I am trying to add more vegetables to my diet.  My thought was that a soft vegetable would match best with this. 

Ingredients:
  • 1 package bean threads (2 ounces)
  • 1 can sardines in tomato sauce (5.5 ounces)
  • 1 package pre-rinsed spinach (8 ounces)
  • 1 onion, sliced
  • 3 cloves garlic, chopped
  • olive oil
Instructions:
  1. Soak bean threads in water to soften.
  2. Slice onion and chop garlic.
  3. Heat pan and add olive oil.
  4. Add onions and garlic. Stir fry until fragrant.
  5. Add spinach and cover to wilt. Stir.
  6. Add sardines and bean threads. Stir well and serve.
  7. Enjoy!
