Scallion Oil Noodles

 

I had been seeing these scallion oil noodles on social media and had to try it since I had a ton of scallions from the onion harvest in my parents' garden.   This dish turned out super delicious.  I had several meals out of the one package of noodles.  I tried a variation with scrambled eggs, but it wasn't as good.  I think basically any type of protein would work great with this.  I just needed some kind of protein in there.

I've seen different variations of this dish online.  This is what I went with.

Ingredients:

  • 1 quart bag 3-inch pieces of scallions
  • 1 cup olive oil
  • 2 Tablespoons white sugar
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon oyster sauce
  • 1 bunch somen noodles
  • 1 egg
  • dash of sesame seeds (optional for garnish)

 Instructions:

  1. Heat olive oil in pan on low/medium heat.
  2. Add scallions to oil and flip over frequently to cook evenly.
  3. Boil water, cook noodles according to package directions, and drain.
  4. Fry egg
  5. When scallions are done, remove from oil and turn off heat.
  6. Add sugar, soy sauce and oyster sauce to oil and stir well.  This is your scallion oil.
  7. Add drained noodles to bowl.
  8. Add enough scallion oil to coat noodles and mix well.
  9. Top with fried scallions, fried egg, and sesame seeds.
  10. Enjoy!
