Dijon Mustard and Red Wine Vinaigrette Fish

 

I recently saw a video on Instagram for a simple dressing recipe by chef Alex Guarnaschelli.  Unfortunately, I didn't bookmark it and I can't find it now.  I googled and scrolled all over the Food Network account.

It was just three ingredients: dijon mustard, red wine vinegar, and olive oil with a ratio of 1:1:2. I tried it with some cracked black pepper on tossed greens and really liked it.  So I decided to try this dressing as a marinade for fish.  

The fish I used was called swai.  Although I like the dressing, the fish was awful.  It had a dirt flavor that overpowered the dressing.  I made a post on Facebook Marketplace to give away the remainder for free to someone who would enjoy this, as I clearly did not.  A woman replied quickly replied to my post and drove from Kapolei.  She was thankful and said she'd have her boyfriend prepare it with a batter in the way Zippy's restaurant prepares fish.
