Chili with Beans & Veggies

Here's what I did for this one.
 
Ingredients:
  • 1 lb ground beef
  • 5 cloves garlic, chopped
  • 1/2 medium onion, chopped
  • 1 zuchinni, chopped
  • handful of cherry tomatoes, sliced in half
  • 1 can kidney beans, rinsed and drained
  • 2 cans diced tomatoes
  • 1/2 green bell pepper, cut into bite-size pieces
  • 2 T chili powder
  • 2 t cumin
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t cayenne pepper (optional)
  • 1 T dried parsley
  • 1 t cracked black pepper
  • pinch of salt
Instructions:
  1. Brown ground beef
  2. Rinse and prep ingredients as listed above (chop, slice, rinse, drain)
  3. Remove excess fat (that came from the beef) from the pan
  4. Add tomatoes, onions, bell pepper, zucchini, onions, and kidney beans
  5. Stir and let simmer while you add the spices
  6. Add remaining ingredients and stir in well
  7. Let simmer for about 15-20 minutes.
  8. Enjoy!

Meaty Mushroom Chili

 

The mushrooms were on sale for two trays for $5.00.  I got two and used one of them for this meaty mushroom chili dish.  I found a recipe for this online, but changed it up a bit according to what I had on hand and added a zucchini for additional veggies.  Here's the link to the original inspiration recipe:  https://houseofnasheats.com/meaty-mushroom-chili/ 

Here's my recipe variation.

Ingredients:

  • 2 Tablespoons olive oil
  • 4 slices Canadian bacon, chopped
  • 1 tray mushrooms, chopped
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1 zucchini, chopped into bite-size pieces
  • 1 pound ground beef
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 3 Tablespoons chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon white sugar
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 teaspoons cayenne pepper
  • 1 can kidney beans, rinsed and drained
  • 1 cup water

Instructions:

  1. Prepare ingredients as described above (chop, rinse, drain).
  2. Add oil to heated pan.
  3. Add canadian bacon, onions, garlic, and zucchini.  Stir, cover, and let sweat.
  4. Add ground beef.  Break it up into crumbles and stir. Cook meat through until no longer pink.
  5. Add diced tomatoes and tomato sauce. Stir. Bring to a simmer.
  6. Add spices (chili powder, cumin powder, sugar, black pepper, paprika, cayenne pepper), kidney beans and water. Bring to a simmer and let it cook for about 30 minutes.

Beanless Turkey Chili


This is paleo-friendly. No beans included.

I usually add zucchini to this, but I didn't have any and I wasn't in the mood for a trip to the store.  I've been trying to eat less carbs, so I had the chili on a bed of mixed greens instead of rice.  Delicious!

Here's my recipe.

Ingredients:
  • 1 package ground turkey (approximately 2 pounds)
  • 1/2 onion, chopped
  • 4 cloves garlic, sliced
  • 1 can diced tomatoes
  • 3 bell peppers, cut into bite-size pieces
  • 1 cup cherry tomatoes, halved
  • 2 Tablespoons cumin
  • 2 Tablespoons chili powder
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • salt and pepper to taste
  • 2 dashes of parsley
  • 1-1/2 teaspoon cayenne pepper (optional, but I like the heat)
Instructions:
  1. Prepare ingredients as described above (chop, slice, etc.)
  2. Brown ground turkey.
  3. Add remaining ingredients. Mix well, cover, simmer for 15-20 minutes.
  4. Stir one more time.
  5. Enjoy!
